The ball is ground level. I'm pretty sure the kicker and the keeper see each other. And those initial half a second or so when the kicker is not sure which way the ball is coming is crucial.
Also once the kicker directs his players to form a wall on that side, they move on to guard the other side. So if you can bend the ball around the outside of the defenders' wall, you got something cooking.
