First of all without advanced degree (more that a masters), chemistry and biology have lower median salaries than a philosophy degree.

Most sciences without a professional degree, PhD or combined with computer/business skill is a major where you hit a professional ceiling early in your career if you can even find a job.
The same could be said of Math and Physics also. They are only money making skills in combination with other skills or at a very advanced level.
Second, not all engineering degrees are equally in demand.
For recent grads, computer and aerospace engineering is unemployment rate is 7.5%.
For mechanical, electrical, chemical, civil, or robotic engineering they are all below 2.5%.
Like investing in stock, you have to look at the trajectory of a field and not look at broad advice from the government or media.
By the time the Wall Street Journal is pushing successful majors, in the 4 years it takes a new college student to graduate in it, the field is dead whether it is the end of the cold war killing electrical/mechanical engineering majors, the hiring of accountants over lawyers killing the law field or AI currently killing computer jobs.
