feed it once a week, but it can also survive in the frig during vacations.
My wife regularly bakes so she buys special pizza flour from either Grist & Toll or she gets it shipped. The pizza flour is what is needed to have a thin crust that doesn't break-up while spreading the dough. I use the backs of my wrists to spread the dough - I never roll it out.
Pizza stone in a hot oven is a must.
