Offenses are not designed to get "open layouts". They are designed to put each player in the optimal position to utilize his best skills.
Have a good post player? Design an offense to get him the ball on the low post.
Have a good three point shooter? Design an offense to get him the ball behind the arc.
Have a good one on one player? Design an offense to create switches which put him in a favorable matchup.
Watch any game. The vast majority of scoring is done by individual skills of the players, not by an offense which generates open layouts or easy shots on most possessions.
