Find an AI that invents a game and starts playing or doodling or humming a tune to pass time when it's down and has nothing to do and no tasks to complete.
Attempting to take over the world in its downtime doesn't count. That's still some task that's who knows what previous task it's a spill over from. But just truly purposeless action it's doing only to kill time. I don't care how fast it's doing it because it has all kinds of fast computing capacity.
Boredom is an essential indicator of sentience IMO. So is (purposeless) curiosity. I mean, sure there are borderline animals like goldfish, who as far as I can tell, does neither but I suppose is still sentient, but when we're talking about AI we're presumably talking about something with a higher level of intelligence.
As soon as we observe that kind of behavior, I'll be ready to start modifying my thoughts on this.
