Keep the moisture content low - that’s the enemy of the dough
Pizza is all about the dough
I prefer a sauce cooked down to remove moisture- add red wine while it cooks down to sweeten the sauce
My wife and I have been making pizza at home for over 40 years - we started with a Chef Boyardee box. Now, we use sourdough starter with pizza flour
